Emma Woods came out swinging in the opening round of Beat Bobby Flay, securing a convincing victory after turning the episode’s secret ingredient into the centerpiece of her dish.
The first round gave the chefs just 20 minutes to create a dish featuring Meyer lemons, a variety known for its sweeter, more delicate flavor compared with traditional lemons. The ingredient immediately created a challenge: the chefs had to showcase its bright citrus character without allowing the acidity to overpower the rest of the dish.
Adding to the chaos, Hoda Kotb and Katie Lee Biegel wasted little time getting involved. The two repeatedly teased Bobby Flay during the opening minutes, deliberately trying to distract the veteran chef while Emma Woods and Quentin Garcia battled against the clock.
Emma appeared completely unfazed.
The chef leaned into her Modern American cooking style, deciding to pair the Meyer lemon’s sweet-tart flavor with rich, creamy elements. Rather than simply using the lemon as a finishing touch, she made it a major component of her dish.
Her creation was a quick handmade pasta with Meyer lemon cream sauce, butter and fresh herbs.
The dish immediately impressed Katie Lee, who praised the way Emma balanced the richness of the cream and butter with the refreshing acidity of the Meyer lemon. The citrus provided enough brightness to keep the pasta from becoming overwhelmingly heavy, while the herbs helped bring the different flavors together.
Quentin Garcia took a different approach.
He prepared a pan-seared fish with Meyer lemon beurre blanc, relying on the delicate flavor of the fish and the classic French sauce to showcase the secret ingredient.
The fish itself was cooked extremely well, giving Garcia a strong technical foundation. However, the judges felt the beurre blanc became too rich.
Rather than allowing the Meyer lemon to shine, the buttery sauce appeared to overwhelm its more subtle flavor. That became the key weakness in Garcia’s dish.
With the judges comparing the two plates, Emma ultimately had the advantage.
Her pasta was viewed as the more balanced interpretation of the Meyer lemon, while Garcia’s dish, despite its strong execution, struggled to give the secret ingredient enough room to stand out.
Emma Woods won Round One and advanced to the second round, putting her one step closer to facing Bobby Flay himself.
The victory also demonstrated an important difference between the two competitors: Garcia showed impressive technical control, but Emma appeared more successful at building an entire dish around the personality of the secret ingredient.
