As the hog cooked over the outdoor pit, an increasing amount of rendered pork fat began dripping into the hot coals.
The combination proved disastrous.
The pit suddenly erupted into a huge burst of flames.
The fire threatened to scorch the meat and turn hours of work into a complete disaster.
Al Frugoni immediately jumped into emergency mode, using cold ash to help suppress the flames and regain control of the cooking environment.
The quick response prevented the meat from being completely burned.
But the damage wasn’t entirely avoided.
The intense flare-up caused the hog’s skin to absorb an excessive amount of smoke, leaving the finished exterior with an overpowering smoky character.
