Kristen Kish may be known for winning Top Chef, hosting one of television’s most beloved cooking competitions, and running a successful restaurant empire, but her latest culinary showdown focused on something far simpler: the perfect sandwich.

The celebrated chef recently appeared on The Great American Sandwich Show, where celebrity guests face off against host and comedian Lindsay Ames by creating their favorite sandwiches. The concept is straightforward but surprisingly revealing. Each guest prepares their go-to sandwich, Ames creates her own interpretation, and the two compare creations before ultimately crowning a winner.
For Kish, the choice was easy.
Rather than selecting an elaborate chef-driven creation filled with unexpected ingredients and complex techniques, she chose a classic Italian sandwich—proof that even some of the most accomplished chefs appreciate the beauty of simplicity when it’s executed well.
The decision immediately sparked discussion because Kish’s version included a somewhat controversial ingredient among sandwich purists: mayonnaise.
While many Italian sandwich enthusiasts insist that oil and vinegar alone provide enough moisture, Kish firmly sided with the mayo supporters.
Her ideal Italian sandwich featured freshly baked bread layered with deli meats, lettuce, oregano, Italian seasoning, salt, pepper, oil, vinegar, mayonnaise, and banana peppers. She also demonstrated a technique that caught viewers’ attention by carefully folding the deli meats instead of laying them flat, creating more texture and volume in every bite.

The result was a sandwich that embraced tradition while still reflecting Kish’s personal preferences.
Ames, however, wasn’t interested in simply recreating a classic.
Her version took the familiar Italian sandwich and elevated it with several bold twists. She crisped up slices of salami and prosciutto to add crunch and deeper flavor, then mixed Calabrian chili peppers into mayonnaise for a spicy kick. To finish the sandwich, she added red onions pickled in vinegar and Italian seasoning, creating an extra layer of acidity and complexity.
The two sandwiches shared the same foundation but delivered completely different experiences.
As they sampled each other’s creations, Kish noted how dramatically a few ingredient changes could alter the overall flavor profile.
“The first flavor I get on mine is oregano,” she explained. “The first flavor I get on yours is Calabrian chili.”

The observation highlighted one of the episode’s central themes: simple foods often require the greatest attention to detail. Small adjustments can completely transform the final product.
Kish emphasized this point when discussing why she loves Italian sandwiches.
“It’s easy to mess up because it’s so simple,” she said.
That philosophy reflects much of her cooking career. Whether competing on Top Chef, running her acclaimed Austin restaurant Arlo Grey, or mentoring aspiring chefs, Kish has often championed restraint and precision over unnecessary complexity.
The episode also offered viewers a glimpse into her approach as the host of Top Chef. When Ames asked what motivates her in her current role, Kish spoke about the compassion she feels toward contestants because she understands firsthand the emotional pressure they face.
Having famously fought her way back into the competition through Last Chance Kitchen after being eliminated during Season 10’s dramatic Restaurant Wars challenge, Kish understands the highs and lows of the experience better than almost anyone.
That empathy has become one of her defining qualities as host, helping her connect with contestants while maintaining the authority expected of a judge.
Still, no matter how heartfelt the conversation became, the competition eventually required a winner.
Many viewers expected Ames’ spicy, modernized version of the Italian sandwich to come out on top. The Calabrian chili mayo, crispy cured meats, and pickled onions seemed like the kind of upgrades that would impress a professional chef.
Instead, Kish remained loyal to the power of simplicity.
After tasting both sandwiches, she declared her own classic Italian sandwich the winner.
The decision surprised some viewers, but it reinforced her belief that when basic ingredients are balanced correctly, there’s little need for reinvention.
The victorious sandwich was ultimately given a fittingly playful name: “Kish Me.”
And with that, the sandwich earned its place on The Great American Sandwich Show‘s growing board of champions.
For fans, the episode delivered more than just a debate about mayonnaise, banana peppers, or Calabrian chili. It offered another reminder of why Kristen Kish has become one of the most respected personalities in food television: she understands that great cooking doesn’t always require complexity—sometimes all it takes is a perfectly made sandwich.
