Emma chose a Southern classic close to her culinary identity: Southern Fried Chicken & Biscuits with Spicy Gravy. Her strategy was built around comfort, technique and familiarity. Drawing from a family recipe associated with Whistle Pig, she carefully marinated the chicken in seasoned buttermilk before frying it until golden and crisp. At the same time, she worked on fluffy Southern-style biscuits and a rich gravy designed to bring the entire plate together.
Bobby, however, had no intention of simply matching Emma’s approach.
As expected, he immediately put his own spin on the dish, bringing serious heat to the gravy with Fresno and habanero peppers. Instead of allowing the sauce to become another supporting element, Bobby made it one of the defining components of his plate.
