One of the biggest surprises of Beat Bobby Flay came when Houston chef Thomas Bille defeated Bobby Flay using the dish he knows best—Duck en Mole Negro.
Thomas selected his signature mole negro, a recipe built with around 32 ingredients. Traditional mole negro often requires more than 30 ingredients and several hours of preparation, making it one of Mexico’s most complex sauces. On the show, however, both chefs had just 45 minutes to complete the challenge, forcing them to balance speed with authenticity.

The judging panel—Alex Stupak, Lourdes Castro, and Grace Ramirez—ultimately awarded the victory to Thomas, making him one of the few Houston chefs to defeat Bobby Flay on the long-running Food Network competition.
So why did Bobby lose?
According to the judges, Thomas’ mole was the clear standout. They praised the remarkable depth of flavor, noting that his careful charring of the ingredients created a rich, smoky sauce with impressive complexity. His presentation also earned compliments, with cacao nibs and toasted almonds adding both texture and visual appeal. The only criticism was that the duck skin could have been crispier.

Bobby Flay also prepared Duck Mole Negro, but added pomegranate relish, apricot, and a green chile relish to his plate. While the duck itself was well executed, the judges felt the extra accompaniments worked against the dish. The sweet fruit relish overpowered the mole, shifting the focus away from what should have been the centerpiece of the plate.
In the judges’ view, Bobby’s entry tasted more like an excellent duck dish than a true mole negro, while Thomas’ version stayed faithful to the traditional spirit of the recipe and allowed the sauce to remain the undisputed star.
For Thomas Bille, it was a career-defining victory—and another reminder that even Bobby Flay can be beaten when a chef brings a truly exceptional signature dish to Kitchen Stadium.
