For years, the father has relied on traditional Peruvian recipes and his own methods of running the restaurant. To him, those dishes are not simply items on a menu. They represent his culture, his history and the identity he worked to build into the restaurant.

He remains firmly convinced that the restaurant’s original recipes are its soul — and changing them too dramatically could mean losing what makes the business special.

But his two sons see the situation differently.

They believe the restaurant needs a new direction if it is going to survive. The brothers want to demonstrate that they are capable of taking over the family business, introducing new ideas and adapting the restaurant to a changing market.

The conflict has left them struggling to establish their own identities as potential future owners while remaining under their father’s authority.

That makes this rescue particularly difficult for Jen Agg and Aarón Sánchez. They are not simply being asked to improve a menu, increase revenue or modernize the restaurant’s operations. They must confront a much deeper problem: the father’s unwillingness to relinquish control.

For Aarón, whose expertise is deeply rooted in Latin American cuisine, preserving cultural identity while making food commercially relevant is a delicate balance. The goal is not to erase the restaurant’s Peruvian heritage, but to find a way for that heritage to evolve.

Jen faces a similar challenge from the business side. A restaurant cannot survive solely because its recipes have historical value. It must also respond to customers, competition, changing expectations and modern business realities.
