The latest episode of Top Chef season 23 took the competition to a whole new level by completely eliminating the Quickfire challenge for the first time, forcing contestants straight into a nearly 24-hour endurance test with a Carolina BBQ theme. With no “warm-up” break, the pressure built up right from the start, making this episode one of the most intense challenges of the season.
From the beginning, the 10 chefs were divided into two teams of 5, with Anthony Jones serving as team captain after his victory in the previous episode. He also chose his direct rival, Justin Tootla, to lead the other team. From there, the two teams entered a “whole hog” battle – roasting a whole pig – and then competed in 5 rounds of direct confrontation, each person responsible for a different cut of meat: shoulder, loin, belly, ham, and chopped.

The highlight is that each winning round earns $5,000, bringing the total prize money to $25,000, plus $500 for each member of the winning team. Even contestants on the losing team can still earn money if they win the individual head-to-head round – a mechanism that makes the competition even more intense and unpredictable. And that’s not all; a “s’mores” campfire challenge appears in the middle of the night, where the winner can pocket an additional $500.
But what makes this episode so challenging isn’t just the prize money or the format, but the nature of the challenge itself: roasting a whole pig for 10–12 hours overnight. Teams have to decide how to start the fire, the type of wood for smoking, and when to process each part of the meat – a single mistake could ruin all their hard work. In this context, two experienced BBQ chefs, Brandon Dearden and Sieger Bayer, quickly became the true “operational brains” of their respective teams. In particular, Brandon is emerging as the most formidable contender after this episode. Not only did he expertly control the pork roasting process for the Red Team, but he also directly won the belly round with his pork belly dish combining mac & cheese and collard greens – a dish highly praised for both its technique and flavor. His ability to read the situation, adjust his strategy, and handle protein flexibly is helping Brandon transform from a contestant who was “doubted” in the early episodes into a real contender for the championship.

Meanwhile, Anthony’s team quickly dominated, winning the first three rounds and securing the overall victory. Laurence Louie also made a strong impression with the best dish of the episode, earning him immunity for the following week. However, the losing team faced elimination, and ultimately Sieger Bayer was eliminated after his tenderloin dish failed to meet expectations.
This week’s episode wasn’t just a test of cooking skills, but also a battle of strategy, physical strength, and composure. As the competition intensifies and there are no longer “comfort zones” like in Quickfire, those who adapt quickly – like Brandon – are gaining a clear advantage.
At this rate, the race to the Top Chef Season 23 finals promises many surprises, but one thing is clear: contestants who can manage pressure and take control of the game are the ones with the best chance of going far.
